Sheet Pan Haddock with Swiss Chard and Sun Dried Tomatoe


1 pound haddock filet 10 green olives chopped 1 bunch swiss chard de-stemmed and chopped 1 tablespoon capers 2 tablespoons sun-dried tomatoes chopped 2 tablespoons olive oil 2 cloves garlic chopped Spice Rub ½ teaspoon pepper ½ teaspoon smoked paprika ½ teaspoon dried oregano ½ teaspoon dried thyme

Step : 1

Preheat oven to 400 degrees Fahrenheit

Step : 2 

In a basin, combine chopped Swiss chard, sun-dried tomatoes, olives, garlic, capers, and olive oil. Mix thoroughly.

Step : 3

In a small basin, combine pepper, smoked paprika, dried oregano, and dried thyme to make spice rub. Spread half of the spice rub onto the greens, and then coat the fish on both sides with the remaining half of the spice rub.

Step : 4

Cover fish with the greens mixture.

Step : 5

Bake the fish for 10 to 15 minutes, or until it flakes easily with a utensil.
