Buckwheat Pancake


2/3 cup buckwheat flour 1 teaspoon baking powder 1/4 teaspoon baking soda 1/4 teaspoon salt 1 egg 1/4 cup coconut cream 3/4 cup almond milk or whole milk 1 teaspoon vanilla 2 teaspoons maple syrup 4 teaspoons extra virgin olive oil

Step : 1

Using a fork, combine the dry ingredients (buckwheat flour, baking powder, baking soda, and salt) in a basin.

Step : 2 

In a separate bowl, whisk together the wet ingredients (egg, coconut cream, almond milk, vanilla, and 2 tablespoons of maple syrup).

Step : 3

Combine the dry and liquid ingredients.  Stir using a utensil; avoid overmixing.

Step : 4

Use olive oil to fry crepes in a skillet (two teaspoons per pancake round).  When bubbles appear on the entire crepe, flip it.

Step : 5

Combine a tablespoon of maple syrup and a dollop of yogurt to garnish.
