Preheating the oven to 400°F is required.
Prepare a baking tray in advance by lining it with parchment paper.
Cut peeled potatoes into segments measuring a quarter inch in size.
In a large resealable plastic bag, combine potatoes with garlic salt, olive oil, parsley, and pepper. Potatoes are tossed until coated, then transferred to the prepared baking tray.
After 20–22 minutes of baking, preheat the oven to broil. Broil potatoes for a few minutes to aid in crisping and browning.
